Baked Fish at home (easy and minimal ingredients)

 

Calling out for every fish lover out there, if you have not tried baked fish outside anywhere then its high time you should try this at home. Don't confuse this with grilled fish or dry baked fish in the oven. This is a creamy recipe with fish in white sauce. Do not worry it does not taste fishy, neither does it taste too creamy, it is the perfect balance between taste and smell and creaminess.

The recipe calls for fish fillet, do keep in mind not to use fillets that are frozen for too long, as fish becomes more smelly over time, use as fresh as possible.  

Ingredients (for the fish)

  • boneless fish fillet, cut into pieces as per choice
  • onion
  • cilantro (coriander) or parsley (anyone whichever is available)
  • garlic chopped
  •  baby corn or sweet corn
  • oregano
  • chili powder/ flakes
  • cumin powder
  • black pepper powder 
  • salt
  • butter
  • white oil
  • tomato (cubed)
  • tomato sauce (optional)
  • lemon 
Ingredients (for the sauce)
  • butter
  • flour
  • milk
  • cream (optional)
  • pepper
  • cheese (any kind will do)
Process
  1. Marinade the fish fillet with lemon juice and pepper powder, for not more than 30 mins, as over marinading will hamper the texture of the cooked fish.
  2. In a heated cooking pan, add the required amount of oil and 1tbsp of butter.  Do not add too much of oily as it will make the dish too oily.
  3. Once the oil is heated add chopped garlic, then onion: wait for the onions to get translucent, to it then add either chopped baby corn or sweet corn. Cook them for some time. 
  4. Once they are half cooked add the fish fillet to it, and let it cook for another five mins, till the fishes are half done. at this stage add the coriander or parsley, oregano(enough to make their taste prominent), chili flakes/ powder, little cumin powder, salt to taste, black pepper powder, and lastly the cubed tomato at this stage, you can add 1tsp of tomato sauce if you want to enhance the taste, or you can skip it. then take it off the heat. 
  5. Do not cook the tomatoes, but mix it with the fish and the spices.
Once this is done, place the mix in a baking pan.

Sauce
  1.  In another pan, add 2tbsp of butter and a little bit of oil, after the butter is melted, add flour t it.
  2. Mix the flour very well with the butter.
  3. Then slowly pour milk into the pan and mix thoroughly, be vigorous while mixing, otherwise you will see the formation of lumps. Do not let lumps form. 
  4. Once it starts to cook you will see the milk thickening, and if the sauce feels too thick add more milk mixed with water to it.
  5. At this point, you can add some cream to it, if you want.
  6. Add two slices of cheese to it and let it melt.
  7. Add salt, sugar and black pepper powder to your taste. 
Once the sauce is ready and thick enough to feel like a cheesy sauce, spread it over the already kept cooked fish in the baking pan. Add all of the sauce, as this will be the gravy too. Do not be a miser while covering with the sauce. Do not mix it with the sauce, and let the sauce be over the fish. Now you can add some cheese over the sauce, and some cilantro or parsley. 
Now, bake it in the oven @ 200 degrees centigrade for 20 mins.
Or, bake it in the microwave, convection settings @ 180 degrees centigrade for 18-20 mins. 
Or, put it in the microwave mode for 5-10 mins @ maximum temperature. 
Or, in a big pan, add water, then place a stand in the water and heat the water till it boils over gas, take the utensil in which you have put the ingredients and place it inside the watered pan, then cover it with a lid.

The queues to understand when it is done is that you will see the formation of a crust or a layer at the top of the sauce. Once it turns brownish your dish is prepared. Let it rest for some time in the heat.

Serve it hot, with fried rice, noodles, or pasta.
